The 'Building Socially Responsible Institutions' Summit was one of four Summits at the EAUC-Scotland Conference 2017. This Summit was chaired by Aiofe Behan from Soil Association Scotland, and consisted of three presentations and a workshop. The Summit was sponsored by the Professional Cost Management Group (PCMG). The Summit workshop asked attendees what 'good' food products are, in this case, a 'good carrot' and what the barriers are to getting them into institutions and how to overcome those.

Thoughts and considerations included:

  • Eating is a political act
  • Culture around eating is important
  • A good carrot is organic, local, unprocessed, not judged by its looks, delicious, chemical-free, fairly-priced,  responsibly-grown, consumed - not discarded, seasonal, not over-packaged
  • Barriers to always getting 'good carrots': short-term costs, convenience and availability, customers' interest, weather patterns and seasonality, lack of control as many catering facilities are outsourced, difficulties in changing contracts, storage, demand
